Sloppy Joes will probably never be served at a state dinner, but that doesn't mean that you can make a delicious, practically gourmet version yourself. Skip the spice packets and boxes of chemically laden mixes. Instead, use fresh, locally sourced ground beef, add some spices, cook, put it on a fresh, homemade bun, and savor every bite.

2 garlic cloves, minced
2 tablespoons olive oil
In a large saucepan, sauté garlic in olive oil over medium-high heat until fragrant, about 2 minutes.
1 pound lean ground beef
Add ground beef and cook until only a hint of pink remains. Using the lid of the saucepan, drain fat and liquid into a glass jar for disposal.
½ cup water
170g / 6 ounces tomato paste (1 small can)
68g / ¼ cup ketchup
12g / 1 tablespoon brown sugar
1 teaspoon chili powder
1 teaspoon kosher salt
¼ teaspoon ground cumin
¼ teaspoon cinnamon
1/8 teaspoon freshly ground black pepper
Return saucepan to stove and add all other ingredients to the ground beef. Cook over low heat, stirring frequently until thickened, about 4 minutes. If mixture gets too thick, add additional water one tablespoon at a time until desired consistency is reached.
