Love the taste of mashed potatoes but looking for a lower carb version? Try mashed cauliflower. This recipe will yield a smooth, creamy side dish that's silky smooth and has 75% fewer carbs that mashed potatoes. It was a huge hit at our Thanksgiving dinner last year thanks to the slightly earthy aroma and velvety texture.

  • 4 quarts water
  • Bring water to a boil in a large stockpot.
  • 1080g / 1 head cauliflower
  • Wash and cut cauliflower into small pieces. Cook in boiling water until soft, about 8 to 10 minutes.
  • Drain and place in a salad spinner or between paper towels and pat to dry. Place in a food processor.
  • ¼ cup Parmesan cheese
  • 3 tablespoons butter
  • 1 tablespoon cream cheese, softened
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • Add remaining ingredients to food processor and process until smooth.
  • Transfer to a bowl and serve.
