2 peaches, diced
Dice fruit and add to bowl with sweet potatoes.

Lightly toast shredded coconut in a small skillet over medium heat stirring frequently, about 5 minutes.

Add toasted coconut and coconut milk to bowl and toss to combine. Serve immediately or chill and serve.
