Easy Three Bean Chili

This recipe is great for those nights when you're short on time but still craving a warm, satisfying meal. Best of all, it's vegetarian and full of high-protein beans. For a more time intensive version, feel free to cook dried beans to use.

Easy Three Bean Chili
  • 16-ounce can chili beans, undrained
  • 16-ounce can black beans, drained
  • 16-ounce can pinto or red kidney beans, drained
  • 14 1/2-ounce can Mexican-style stewed tomatoes, undrained
  • ¾ cup chicken or vegetable broth
  • 1 tablespoon ground cumin
  • 1 tablespoon chili powder
  • 1 teaspoon unsweetened cocoa (optional)
  • Combine beans, tomatoes, broth, cumin, chili powder, and cocoa in a large saucepan. Cover and bring to a boil high heat.
  • Reduce heat to medium, cover, and continue cooking for 10 to 15 minutes until thicker, stirring occasionally.
  • dollop sour cream (optional)
  • Transfer to individual serving bowls and garnish with sour cream, if desired.
