Sweet Potato and Pineapple Fruit Salad

Sweet potatoes are paired with tropical fruit in this light but satisfying side dish. Compliments a main course of chicken or fish.

Sweet Potato and Pineapple Fruit Salad
  • 1 large sweet potato
  • Wash the sweet potato and poke it all over with a fork. Place on a medium plate and microwave until it becomes soft when pressed with your finger, about 8-10 minutes.
  • Allow to cool, then slice off the skin with a sharp knife. Dice the sweet potato into bite-sized pieces and place in a medium bowl.
  • 5-6 kiwi, sliced
  • 1 fresh pineapple, diced
  • 2 peaches, diced
  • Dice fruit and add to bowl with sweet potatoes.
  • ¼ cup shredded coconut, lightly toasted
  • Lightly toast shredded coconut in a small skillet over medium heat stirring frequently, about 5 minutes.
  • ¼ cup coconut milk
  • Add toasted coconut and coconut milk to bowl and toss to combine. Serve immediately or chill and serve.
