Sugar-Free Oatmeal Raisin Cookies

These cookies are made without any added sugar and use mashed bananas to bind the dough rather than eggs. The result is a healthy cookie that you can serve as breakfast guilt-free.

Sugar-Free Oatmeal Raisin Cookies
  • Preheat oven to 350°F. Line baking sheet with parchment paper.
  • 1 ½ cups regular rolled oats
  • 1 cup unsweetened coconut flakes
  • ¼ cup whole wheat flour or almond meal
  • 1 ½ teaspoons coarse sea salt
  • 1 teaspoon cinnamon
  • ½ teaspoon allspice
  • Combine oats, coconut, flour, sea salt, cinnamon, and allspice in a large bowl.
  • 1 ¼ cup raisins
  • Add raisins to dry ingredients and stir to combine.
  • 4 ripe bananas
  • In a separate bowl, mash bananas with a potato masher.
  • ¼ cup canola oil
  • 1 teaspoon vanilla extract
  • Add oil and vanilla extract to bananas and stir to combine.
  • Add banana mixture to dry ingredients. Using a spatula, fold ingredients together until well combined.
  • Place a medium cookie cutter or biscuit cutter on the prepared baking sheet. Spoon prepare dough into cutter until cookies are about ¼ to ½ inch thick and press down to form a cohesive shape. Do not make cookies too thick or they will not bake all the way through. Remove cutter and repeat with remaining dough, leaving about ½ inch of space between cookies.
  • Bake at 350°F until tops of cookies are golden brown, about 20 minutes. Remove from oven and let cook on a wire rack.
