A basic batter that makes wonderful crepes. This is 1.5 times the original recipe as we've found that a small portion of the batter ends up getting sacrificed at the bottom of the pan. Affordable electric crepe makers are available on Amazon.

227g / 8 ounces all-purpose flour (1 ½ cups)
3 eggs
¾ cup milk
¾ cup water
3 tablespoons butter, melted
¼ plus 1/8 teaspoon salt
Put all ingredients in a large bowl. Using an electric hand mixer, beat for 30 seconds to combine. Scrap down the sides of the bowl and blend for another 30-60 seconds until smooth.
Batter can be used immediately, however if you let it stand for an hour or two it will produce slightly more tender crepes. Batter can also be refrigerated for up to three days and used as needed.
To cook, pour batter in a shallow pie dish. Dip heating side of electric crepe maker in batter for 3 seconds and invert onto counter to cook. Cook until ready light turns on, or until edges are slightly brown, about 1 to 2 minutes.

Top crepes with your favorite filling and roll or fold as desired.
Leftover crepes can be stored in an air tight container in the refrigerator and will keep for several days.
