Vegetarian Soft Tacos
Some nights I just need a simple, quick, satisfying dinner. This fits the bill on all counts - and as an added bonus is vegetarian. This dish greatly benefits from buying organic or high quality salsa and refried beans.

- Serves 4 to 6
- 16 ounces organic salsa
- 16 ounces organic or homemade refried beans, fat free
- In a large, microwave safe bowl, combine the salsa and refried beans.
- 1 package taco seasoning mix OR 1 teaspoon cayenne pepper (optional)
- ¼ cup water (optional)
- If using taco seasoning, add taco seasoning and water. Mix well. Otherwise, omit both.
- Microwave for 5 minutes on high. Stir well.
- 10 flour tortillas
- lettuce, shredded (optional)
- 8 ounces Colby or mexican cheese blend, shredded (optional)
- tomato, diced (optional)
- sour cream (optional)
- Avacado or guacamole (optional)
- Top tortillas with filling and toppings as desired.
