Vanilla Extract
Making vanilla extract at home is much easier than you might think. The resulting vanilla extract will yield cookies and cakes with deeper, more nuanced hints of vanilla. As an added bonus it's also a lot cheaper. You don't need to use a high end vodka - and brand will suffice.

- Yields 3/4 cup
- 1 fresh, good to high quality vanilla bean
- Split a fresh bean lengthwise and scrape out the seeds. Place the seeds and split pod in a 1-cup sealable container.
- ¾ cup vodka (any brand is fine)
- Heat vodka over medium high heat for five minutes.
- Add hot vodka to jar and let the mixture cool to room temperature.
- Seal the container and store at room temperature for one week, shaking gently every day.
- Strain the extract, if desired, and store in a cool, dark place. Keeps indefinitely.
