Sweet potatoes are paired with tropical fruit in this light but satisfying side dish. Compliments a main course of chicken or fish.

1 large sweet potato
Wash the sweet potato and poke it all over with a fork. Place on a medium plate and microwave until it becomes soft when pressed with your finger, about 8-10 minutes.
Allow to cool, then slice off the skin with a sharp knife. Dice the sweet potato into bite-sized pieces and place in a medium bowl.
5-6 kiwi, sliced
1 fresh pineapple, diced
2 peaches, diced
Dice fruit and add to bowl with sweet potatoes.
¼ cup shredded coconut, lightly toasted
Lightly toast shredded coconut in a small skillet over medium heat stirring frequently, about 5 minutes.
¼ cup coconut milk
Add toasted coconut and coconut milk to bowl and toss to combine. Serve immediately or chill and serve.
