Purple Potato Chips

When you have fresh purple potatoes, it's only natural to turn them into delicious homemade potato chips.

Purple Potato Chips
  • Preheat oven to 450°F.
  • 1 pound purple potatoes (about 5 small)
  • Wash and peel potatoes. Cut into 1/16-inch thick slices with a mandoline or a sharp knife. Place cut potato slices in a large bowl.
  • 1 tablespoon olive oil
  • ½ teaspoon kosher salt
  • Toss potatoes with olive oil and salt until well coated.
  • Arrange slices in a single large on a rimmed baking sheet. If you have a wire rack, you can use it to improve air circulation and ensure even cooking.
  • Bake at 450°F until chips are starting to brown on the edges, about 15 to 18 minutes.
  • Remove from oven and place on a wire rack to cool, about 20 minutes, before serving.
  • If chips are not crispy enough, return to oven to bake at 450°F for an additional 5 minutes.
