This delicious chocolate bark has a sharp, sweet kick and is a lot of fun to make. Make it when there's a crowd so that you don't end up eating the entire thing by yourself.

Yields 1 1/2 pounds bark
8 ounces high quality dark chocolate
Melt dark chocolate in a double boiler or in the microwave.
2 teaspoons instant espresso powder
Mix in espresso powder to melted chocolate and stir to combine.
Line a baking sheet with parchment paper and pour the chocolate on it. You can smooth it with a spatula to the thickness you desire.
Place in freezer until chocolate has set, about 20 minutes.
16 ounces high quality white chocolate
Melt while chocolate over a double boiler or in the microwave.
3 teaspoons vanilla extract
2 teaspoons flour
2 teaspoons sugar
In a small bowl, whisk together vanilla extract, flour, and sugar until combined into a thick paste.
Add vanilla-flour-sugar paste to melted white chocolate and stir until no lumps remain. Let sit until slightly thickened, about 3 minutes.
Remove baking sheet with chocolate from the freezer and immediately pour white chocolate on top.
birthday cake sprinkles (at least 3 tablespoons or more)
Generously and evenly cover with sprinkles.
Freeze for 20 minutes.
Once set, break into chunks. Keep refrigerated to prevent bark from melting.
