Beet Chips
After trying a bag of Terra Chips from Whole Foods, I knew how good beet chips could be. This homemade version is as healthy as you can get - thin slices of beets lightly coated in oil are baked until they turn into a delicious snack. In our experience this recipe makes enough for two people and will last about 5 minutes until they've devoured the entire bowl.

- Preheat oven to 350°F with racks just above and below the center position.
- 3 medium beets
- Wash and peel the skin off of the beets with a vegetable peeler. Using a mandoline or sharp knife, slice beet into thin, 1/16 inch thick slices.
- 1 ½ teaspoons extra-virgin olive oil
- Place sliced beets in a large bowl and toss with olive oil until lightly coated.

- Place two wire racks on top of baking sheets. Lightly coat each wire rack with cooking spray to prevent the beets from sticking.
- Arrange beets in a single layer on top of wire racks. Bake at 350°F. Rotate and switch positions of baking sheets in oven after 20 minutes. Bake until beets have dried out and edges turn golden brown, about 20 additional minutes (40 minutes in total).
- Remove from oven and let cool for 10 minutes. Chips will become crispy as they cool.
